What is your background?
I have been cooking for about 40 years. This started when I was a student at Oak Hills Christian College serving in food service. In 2010, I started a catering ministry and helped provide an affordable meal option for weddings, graduation parties, birthdays, and a funeral. Over the years, I have had several opportunities to manage and train staff in restaurants and other service companies, including a cleaning company that I owned and operated for 14 years.
I also have a passion for seeing children and youth turn their hearts to Jesus. This desire has led me to volunteer in children’s and youth ministry for 36 years.
My wife, Cindy, and I have been married for 34 years. We have 4 grown children: 3 sons, William, Josiah, and Nathan, and 1 daughter, D’Lorah.
I came to know Jesus Christ as my Lord and Savior on January 4th, 1984, at a Christian Coffee House Ministry. I was baptized in 1986. I went to Oak Hills Christian College in 1987-1988 and to University of Northwestern in 1990.
For quite a while I have wanted to go on mission trips. In 2016, I went on my first trip to Nicaragua and have gone twice since then. I’ve been to Costa Rica twice, once to Turkey, once to Louisiana, and during the summers of 2021-2023 at Camp Oak Hills (COH).
With dreams of coming on board full-time with Camp Oak Hills, I discussed it with my boss, Scott, during summer camp in 2021. After talking to my wife and both of us going to prayer, I believe God called me to be the camp’s full-time Food Service Director/Head Cook.
What is my area of responsibility?
As the Food Service Director and Head Cook at Camp Oak Hills, you will find me overseeing the various kitchen duties which including cooking, serving, and cleaning before, during and after the lunch/supper meals, from 9:00 am to around 7:00 pm; getting together the afternoon/evening snacks; filling in during the breakfast meal as needed; handling all the dietary needs for the staff and campers; ordering the correct amount of food needed and acquiring the necessary equipment to run the kitchen; as well as aide in stocking for the camp store.
This will include supervising/training the kitchen staff and volunteers in preparing the food, safety standards, and cleanliness in the kitchen. I will make sure standards are kept up to date and followed, including food preparation, handling, and making sure all food is at the correct temperatures; the wearing of gloves/safety gloves, hair nets/hats, and aprons; etc.
I will oversee not only the summer programs, but also the growing year-round calendar of retreats and events.
